Simple Creamy Chicken Soup

Look for ingredients that are already prepped for you! I made this soup super easy using rotisserie chicken from the grocery store that had already been pulled. All I had to do was chop it into the size that I wanted. You can also use leftover chicken from another meal. In addition, I used frozen chopped onions and frozen green peas. I used pre-washed celery sticks and baby carrots – a quick chop and they were ready to go. You could make it even easier by purchasing the small tubs of chopped carrots and celery that are available in many grocery stores.

Quick steps:
- Cook the onion, celery, and carrots in the butter until starting to soften.
- Sprinkle in the flour and cook briefly, stirring frequently.
- Pour in the chicken broth slowly while stirring.
- Add the chicken and green peas and cook until the vegetables are how you like them.
- Stir in the poultry seasoning.
- Remove from heat and stir in the half and half.
- Salt and pepper to taste.

You can definitely skip the pre-prepped food. Just buy your fresh vegetables and you can still make it a quick turn-around by washing and chopping the night before. If you want to cook your own chicken, simply boil, bake, or put it in the slow cooker ahead of time. You can pull or chop it a day or two before and have everything ready to go for soup day!

Simple Creamy Chicken Soup

A comforting creamy chicken soup with celery, green peas, and carrots that uses fresh and pre-prepared ingredients to save you time and energy while preserving that down-home flavor.
Ingredients
- 6 tablespoons butter
- 2 cups frozen chopped onion
- 3 stalks celery - chopped
- 1/4 cup chopped carrot
- 4 tablespoons flour
- 1 box chicken broth (32 oz.)
- 2 cups frozen green peas
- 4 cups chopped or pulled rotisserie chicken
- 1/3 cup half and half
- 1/2 teaspoon poultry seasoning
- salt and pepper to taste
Instructions
- Prep your ingredients: Chop your celery and carrots into bite-sized pieces. Pull or chop your chicken if it is not already prepared.
- In a large soup pot, melt butter over medium heat.
- Add the onion, chopped celery and carrot, and cook in the butter about 5 minutes or until vegetables are beginning to soften, stirring frequently.
- Reduce heat.
- Sprinkle the flour over your butter mixture and stir to mix in. Stir this mixture frequently while cooking over low to medium heat just long enough to lightly cook the flour to remove the raw taste. Do not allow to become brown or dark. This took me 1-2 minutes.
- Add in the chicken broth SLOWLY as follows: Pour in just a small amount at a time and mix in before pouring more. To keep the flour mixture from clumping, you want to slowly add the broth to take the mixture from a pasty, to a muddy, to a soupy consistency. If you pour it in all at once, you are more likely to get clumps.
- Add in the green peas and the chicken and increase the heat back up to medium to bring the soup up to a simmer or very low boil. Stir periodically to keep soup from sticking and allow to cook until vegetables are done to your liking. (I like my peas with just a little crunch to them, so it only took about 5 minutes to get there for me.)
- Add poultry seasoning and stir in.
- Remove from heat.
- Once any boiling or bubbling has stopped, slowly stir in the half and half.
- Add salt and pepper to taste.
- Serve up in your favorite soup bowl and enjoy!
Notes
Sourdough toast and sliced sharp cheddar cheese are delectable with this soup! Biscuits would pair beautifully as well.
Don't love green peas? Switch out for your favorite vegetable or give it some variety using frozen mixed vegetables!
